A lighter alternative to the Ricotta and Amarena tart in that the biscuit pastry casing is filled with incredibly light cream, which is whipped with a good glug of Amaretto. Over the top of this cloud of perfumed cream sits an array of plump seasonal berries, dusted with icing sugar and decorated with roughly torn mint leaves.
